This bowl is super refreshing and will leave you satisfied during any detox.
SERVES 2-3
Ingredients
1 cup cooked rice
2 chicken breasts (boneless)
1 tomato
½ red onion
100g feta cheese
½ cup of cucumber
1 tsp paprika
1 tsp chicken spice
2 tbsp coconut oil (or any oil of your choosing)
Salt and pepper to taste
Method
Preheat oven to 180° Celsius (356° Fahrenheit).
Season chicken with paprika, chicken spice, salt, and pepper.
Place chicken in a roasting dish with the coconut oil and roast for 20-30 minutes (or until the chicken is cooked).
Slice the tomato, red onion, cucumber, and feta.
Once the chicken is cooked, let it cool and then cut into bite-sized pieces.
Assemble the Greek Chicken Bowl by placing the rice first and adding the chicken, tomato, red onion, cucumber, and feta.
Tip: Garnish with plain Greek yoghurt and mixed herbs.
