Gluten-Free Banana Bread



This sweet treat is great for breakfast or afternoon tea, either way it will make your home smell delicious and settle your sugar cravings.


- 4 overripe bananas

- 3 large organic eggs (room temperature) - 1 cup organic sugar - 1/4 cup melted coconut oil - 1 3/4 cups almond flour - 1/2 cup tapioca flour - 1 teaspoon baking soda - 1/2 teaspoon baking powder

- Pinch of cinnamon, not too much, seriously or it will overpower the banana. -1/4 teaspoon salt Instructions 1. 1Preheat oven 325° F. 2.Combine mashed bananas, sugar, butter, egg, and vanilla.. 3. In a separate bowl combine the flour, salt and baking soda. Stir to combine all of the dry ingredients.

4. Slowly add the dry mixture to the wet mixture until fully combined. 5. Pour into 1 large greased loaf pan.

6. Bake for 50-60 minutes. 8. This recipe will also make 12 muffins just adjust the baking time accordingly.
